Research Interests

The main theme of my research is to develop natural antimicrobial compounds to enhance the safety and quality of food. One of my research focuses is to discover and characterize natural antimicrobial peptides (e.g., bacteriocins) and lipopeptides using chemical and genetic tools. These antimicrobial agents have the potential to be used as natural food preservatives, animal feed additives or novel antibiotics against drug-resistant bacterial pathogens. My other research interest lies in studying the transmission, ecology and evolution of foodborne pathogens and spoilage microorganisms using genomic, transcriptomic, and metagenomic approaches.
